It is a very difficult to achieve balance between the strong aroma of our cacao Nacional and the delicacy of the Ciaculli late mandarin, a sweet variety produced in what little that remains of the Conca d’Oro in Palermo that has fascinated poets and travellers from all ages.
Sabadi's Modica chocolate line is traditionally made according to the age-old cold working process. Throughout the process the temperature never exceeds 45 degrees C/113F. Because of this, all the cocoa’s unique and aromatic notes and the ingredients’ beneficial properties are fully preserved. The unique coarse texture is even more unique and a reminder to how chocolate was once made.
The raw materials used are organic certified and come from fair trade producers and Slow Food presidia with respect for small indigenous communities, the environment and biodiversity.
