La Ferme Du Loup - Conifer Maple Syrup
There’s something wonderfully unexpected about bringing the fragrance of a northern forest into the kitchen. From the woodlands of Québec, La Ferme du Loup has created an intriguing expression of Canadian maple syrup, infused with the fresh, aromatic character of conifers.
The natural richness of pure maple meets delicate evergreen notes, introducing a refreshing, subtly menthol-like quality that brings balance and complexity to its familiar sweetness. It’s a flavour that feels distinctly Canadian, drawing inspiration from the forests, changing seasons and botanical character of Québec’s landscape.
Drizzle over thick Greek yogurt, pair with soft cheeses or use as a glaze for salmon and roasted vegetables. Particularly beautiful with gravlax, it also lends an unexpected woodland character to gin cocktails, whisky drinks and other creative concoctions.
An inventive celebration of Québec’s maple heritage, with a distinctly northern point of view.
Tucked into the forests of Saint-Paulin, in Québec’s Mauricie region, La Ferme Du Loup has been exploring the extraordinary possibilities of maple since 2005. Founded on a century-old sugar bush, the family-run operation takes inspiration from the surrounding forest, Nordic culinary traditions and a deep respect for the land. Working with carefully harvested maple sap, wild botanicals and ingredients drawn from the Québec landscape, they create distinctive maple syrups that go well beyond the familiar. From the earthy character of chaga to the aromatic notes of conifers and woodsmoke, each expression offers a different taste of the Canadian forest. Thoughtful, inventive and wonderfully rooted in place, La Ferme du Loup is a celebration of Canadian food culture and the possibilities of an extraordinary natural ingredient.
