White cacao (also known as Theobroma bicolor) grows in the ancient forest gardens of Mexico. These forest gardens are a habitat for fauna like the jaguar and provide ways for Indigenous communities to create safety belts for communal use around natural areas. This is beyond conservation, and is rooted in millennia of ecological and spiritual stewardship.

ChocoSol is proud to be part of a small but growing cadre of chocolatiers, chefs, farmers & artisans participating in the regeneration of white cacao through agroecological tree planting, dialogue & exchange, and recipe development & intercultural learning.

Founded in 2004 in Oaxaca, Mexico and now based in Toronto, ChocoSol is a craft chocolate maker dedicated to transforming cacao into small-batch, bean-to-bar dark chocolate. With a name that honours the sun, soil and soul behind their craft, ChocoSol works in partnership with Indigenous communities across the Americas to source and stone-grind their cacao. Their chocolate is made without dairy, soy, or artificial ingredients, ensuring a pure, flavourful experience that respects both the environment and the people who cultivate it.
