Sabadi uses the sanguinello orange variety, an age-old variety that grows from late February to April and now forgotten by the mass market. It has a red rind, rich in essential oils and very aromatic.
Sabadi's Modica chocolate line is traditionally made according to the age-old cold working process. Throughout the process the temperature never exceeds 45 degrees C/113F. Because of this, all the cocoa’s unique and aromatic notes and the ingredients’ beneficial properties are fully preserved. The unique coarse texture is even more unique and a reminder to how chocolate was once made.
