Fig Mood starts to introduce more fruit into the espresso. Its hallmark is its fig-like sweetness, but the coffee brings in juicy cherry liveliness and it's rounded out with candied pecan - bringing balance, sweetness and stone fruits. It's designed for those that want to delve further into the fruity espresso territory but still enjoying grounding notes of chocolate, candied pecans and cola.
The coffee in Fig Mood espresso right now comes from an awesome producer from Santa Barbara, Honduras.
Phil & Sebastian have been sourcing coffee from the highlands of El Cielito for over a decade, drawn to its unique microclimate and exceptional coffee. Sitting at 1700m, Roselis Herrera’s farm is a mix of old-growth Bourbon and newer Pacas, producing coffee with remarkable sweetness, balance, and just the right amount of fruit.
Though Roselis owns the land, day-to-day operations and processing are overseen by her uncle, who has been refining coffee quality in the region for years. Until recently, most farmers here sold unprocessed coffee to co-ops, but a shift toward independent processing has unlocked the region’s full potential. By investing in her own infrastructure and leaning on family expertise, Roselis has created something special—coffee that captures the best of El Cielito’s terroir.
One of the standout farms in the region belongs to Pedrito, who inherited old-growth Bourbon trees from his father - some of the finest in El Cedral. After years of struggle, he dedicated himself to improving quality, applying a light double-fermented anaerobic washed process. This method enhances the coffee’s natural fruit character while maintaining caramelized sweetness and structure.
The result? Coffees that are rich, layered, and deeply expressive of the land they come from - proof of what’s possible when tradition meets a relentless pursuit of quality.
