Phil & Sebastian - Candy Cloud Espresso
WHOLE BEAN
Tasting notes: Strawberry Jam, Butterscotch, Floral
Candy Cloud is an espresso that will push your boundaries. The coffees we put in it are fun, a bit out there, but above all sweet and super interesting. The coffee in Mystic Melon right now is a blend of a natural processed coffee and a natural anaerobic, both from southern Ethiopia.
Phil & Sebastian have been sourcing coffee from the highlands of El Cielito for over a decade, drawn to its unique microclimate and exceptional coffee. Sitting at 1700m, Roselis Herrera’s farm is a mix of old-growth Bourbon and newer Pacas, producing coffee with remarkable sweetness, balance, and just the right amount of fruit.
Ethiopian naturals are where many coffee lovers first experience something truly different - the moment they realize coffee can taste just like blueberries. These coffees are bold, fruit-forward, and unforgettable. But they’re also polarizing - just as many people adore them as those who don’t. If you love vibrant, fruit-driven coffees, these are for you. If not, best to skip them.
This particular lot is a blend of two exceptional coffees from Ethiopia, each with its own story.
Ture Waji, owner of Sookoo Coffee, is known for producing “ultra-clean” naturals - a delicate balance of clarity and complexity. At his Raro Nensebo site, Ture sources cherry from 40 smallholder farmers, refining the drying process to highlight fruit character without over-fermentation. His expertise is unmatched, and the result is a natural that is both structured and vibrant.
Bekele Yutute runs a tiny operation at his Kokose site in Bensa, where the coffee is grown at a staggering 2300m - some of the highest altitudes for coffee in the world. This lot, an anaerobic natural, was so limited that only five bags were produced, and Phil & Sebastian secured them all.
Both of these coffees represent the best of Ethiopian naturals; intensely sweet, fruit-forward, and endlessly complex. If you’re looking for a coffee that pushes boundaries, this is it.
